Lunch Time

Quick easy dish for lunch! 
Crustless quiche.



This can be made using any ingredients you like. 
I usually make this dish towards the end of the week with whatever bits and pieces I have left over in the fridge and veg basket. 

Some examples of ingredients that go well together; 

Broccoli and cottage cheese
Feta and Spinach
Mixed peppers and chilli 
Mushroom, onion and cherry tomato 

You can choose whatever you prefer. 
Lightly fry off your veg in coconut oil, mix 4-6 eggs with a drop of almond milk and spices and seasoning of your choice. 
Mix all the ingredients together and pour into a lined dish. 
Bake for 15-20mins at 180.

Another variation is mini crustless quiches prepared the exact same way but baked in a greased muffin tin.


Serve with fresh rocket or spinach leaves, some avocado and some mixed seeds sprinkled on top!
